Is it just me or does it seem like your refrigerator shrinks around the holidays, while your waist grows? I realize the size of my fridge doesn’t actually change, but when all the ingredients for Thanksgiving are packed in, or the leftovers are stored, its awfully crowded. When we’re cramming everything in, we start throwing things out and sometimes the milk is a victim.
Most of the time, being out of milk is not an issue, except at Thanksgiving when its an ingredient and the major stores are closed. With a turkey in the oven, vegetables that need to be chopped and a packed house, you don’t want to have to leave the house and search for an open store. That’s why we started keeping shelf safe milk in the pantry. Shelf safe milk is real milk with no additives or preservatives and doesn’t need to be refrigerated until after its opened. Super convenient for emergencies!
On Thanksgiving Day, when we’ve run out of milk, Mom has used shelf safe milk in her famous sweet potato casserole (yep, this stuff has been around since the 1960’s!). YUM! This recipe is one of my favorites for Thanksgiving, so I’m sharing it with you.
- Sweet Potato Casserole
- 4 Cups Mashed Sweet Potatoes
- 1/4 Cup brown sugar
- 1/4 cup butter
- 1 tsp vanilla
- 2 eggs beaten, room temp.
- For the topping:
- 1/2 cup flour
- 1/3 cup butter
- 1 1/2 cup chopped pecans
- 1/4 cup brown sugar
- For the Casserole: Combine all ingredients and place in a casserole dish.
- For the Topping: Mix ingredients together and then spread across the sweet potato mixture.
- Bake at 325F for 25 minutes.
- Add mini marshmallows and heat for 8-10 minutes, or until brown, if desired. (I usually do half with and half without)
We also carry shelf safe milk in our diaper bag, if we’re out running errands or playing at the park, the kids can have milk to drink instead of a sugary drink. They think its a real treat, since they get to drink chocolate milk out of a box. And I feel better knowing they’re getting eight grams of protein and nine essential nutrients – calcium, A, D and B12, potassium, phosphorus, magnesium, riboflavin, niacin and zinc.
This is a great way to ensure you don’t run out of milk when you need it most. I always pick up a few boxes at the grocery store or order some from Amazon.
