Sweet Potato Foil Packet Tacos

I made a command decision last week at Costco, I bought a giant box of sweet potatoes. I hate waste so I knew if I bought the giant box we would be feasting on sweet potatoes for a solid 10 days or so. It was a challenge I was reluctant and nervous to take on, but I did it! Luckily I have a few awesome sweet potato recipes in my arsenal, and this one is le créme de la créme.

It seems an unlikely combination, sweet potatoes and spinach paired with spicy taco meat and salsa, but it works. It really works. The day after I made this my husband asked cautiously if we could just make it again for dinner that night. I can always count on Natalie for good solid recipes that taste fantastic and are chock full of good-for-you ingredients.

*TIP* Have you ever tried El Pato? It’s just tomato sauce, with a kick! It’s the perfect addition to spice these tacos up a bit, or try adding it to your homemade spaghetti sauce. I always keep a couple of cans on hand for a quick meal (chicken + El Pato + crockpot = easy dinner!)

A delicious taco on a bed of tender, cubed sweet potatoes, a delicious ride for your tastebuds!
  • 1/2 lb ground beef or turkey
  • 2-3 T taco seasoning
  • 1/2 cup tomato sauce (4 ounces) or El Pato Sauce
  • 1 can black, kidney, or pinto beans, drained
  • 2-3 medium sweet potatoes, peeled and cut into 1/2-inch cubes (about 6 cups total)
  • 2 T butter
  • salt
  • 1 1/2 cups chopped fresh spinach
  • 1 1/2 cups shredded cheddar cheese
  • sour cream, salsa, and/or guacamole for garnish
  • 6 12-inch long pieces of aluminum foil
  1. Preheat oven to 425 dgs
  2. Brown ground meat in a skillet over medium-high heat. Stir in taco seasoning, tomato sauce, and beans. Set aside.
  3. To assemble packets, spray the foil with non-stick spray. Place 1 cup sweet potato cubes in the center of each piece. Top with a small piece of butter (about 1tsp) and a pinch or two of salt. Sprinkle some chopped spinach over the sweet potatoes, followed by about 1/3 cup of taco meat and sprinkle of cheese. Fold the sides in, then bring the top and bottom ends of the foil together in the center and fold, sealing the packet.
  4. Repeat with remaining ingredients, placing the packets on a rimmed cookie sheet.
  5. Bake for 25-30 minutes until the sweet potatoes are tender.
  6. Serve with sour cream, salsa, and/or guacamole.
