Orzo Salad

If I’ve learned one thing since I’ve started photographing my food, it is that I eat way too late to take a decently lit picture of my dinner. Sorry about that! Of course it doesn’t help matters that it gets dark before 5:30pm these days, but I promise to try harder to eat earlier!

This light salad came together very quickly and was absolutely delicious! If you need a quick meal, give it a try. You could easily adjust the recipe to incorporate ingredients that you have on hand. The recipe called for Mozzarella, which tasted great in the salad, but I think the next time I make this I will use goat cheese instead for added flavor!

P.S. I also omitted the chicken tonight, frankly because I didn’t want to take the time to defrost it. I wonder if there are other people who are vegetarians out of sheer laziness. It’s a good way to be. But hey! This would be a perfect day after Thanksgiving meal to use your extra turkey in!

{Recipe} Orzo Salad

Total time: 15 mins
  • 1 1/4 cups uncooked orzo
  • 2 cups chopped cooked chicken (such as a rotisserie)
  • 1 1/2 cups fresh baby spinach, chopped
  • 1 cup grape tomatoes, halved
  • 1/4 cup red bell pepper, diced
  • 1/4 cup yellow bell pepper, diced
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoons fresh oregano, chopped
  • 1 cup fresh mozzarella, cubed
  • 2 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 tsp minced garlic
  • Juice from one lemon
  • 1/8 tsp salt
  • 1/8 tsp fresh black pepper
  1. Cook pasta according to package directions, drain well.
  2. Combine pasta, chicken, spinach, tomatoes, red and yellow bell pepper, basil, oregano, and mozzarella in a large bowl and toss well.
  3. Combine vinegar, oil, garlic, lemon juice, salt, and pepper in a small bowl, stirring with a whisk. Drizzle dressing over pasta mixture; toss well to coat.
