Having lived in Southern California all my life and loving spicy foods, I’ve naturally become a huge fan of Mexican food. No, not those American fast food chains – but true, hole-in-the-wall and no-one-speaks english authentic Mexican taco stands.
So when El Monterey Foods contacted me and ask me to try out their national brand of frozen Mexican food, I was a little hesitant. I wasn’t sure they would be able to compete with my standards and what I was used to. But after finding out that El Monterey is manufactured by Ruiz Foods (a California-based, family-owned and operated food processing company), I agreed to give it a shot. Ruiz Foods claims that to this day, they still use ‘Grandma Rosie’s’ recipes as the basis for all their Mexican food products – burritos, taquitos, quesadillas, tamales, chimichangas, and more. Sounds good to me!

Then we add a spicy — but not too hot — red enchilada sauce and top it all with real Monterey Jack, Oaxaca and Cotija cheeses. You’ll enjoy a satisfying meal with rich Mexican flavor!

I’ll just start this off with YUM!!! I’ve never been a fan of enchiladas. EVER. I didn’t care what you put in them – I just didn’t like them. I can honestly say, after trying El Monterey’s three varieties, I would definitely buy them again!
The first entree we tried were the Chicken Enchiladas. I LOVE the fact that the entree comes with the enchiladas lined up on top of a bed of mexican rice. For some reason I was expecting just enchiladas and that I would have to make another side dish. So not the case! The enchiladas are covered in a flavorful sauce and the dinner takes about an hour in the oven at 375 or 17-21 minutes in the microwave. I used the oven because I wanted to make sure I gave this dish the opportunity to be best it could be.
When it was done cooking, I simply scooped the rice and two enchiladas on a plate and topped it with fresh chopped lettuce and onions. The ultimate test was serving it to Ben. He commented on how good it was and said that if he didn’t already know that I didn’t know how to make enchiladas, that he would have thought they were home made. That’s a great compliment!
Both the Cheese and Beef Enchiladas Family Entrees are packaged in the same manner – atop a bed or rice and smothered in rich sauces. Of the three, the chicken were our favorite and the Beef was the least liked. I think the Beef Enchiladas would have been a bigger hit if they were made with chunks of steak instead of ground beef (like a taco).
The entree that I loved the most was the Chicken Mexicana. What a yummy yummy pasta dish! It has wonderful flavor, a good amount of chicken meat and good portion size. We ate it with a salad on the side and there was enough to fill us both up and also for me to have leftovers for lunch the next day. On a separate occasion, I took this entree to Mommy & Me class when it was my turn to bring lunch and it was a HUGE hit with the other moms.
The only downside about these meals is that they do take 60 minutes to bake in the oven – BUT it’s very nice (and EASY) to do. By the time you have cut up the veggies and prepared a salad and set the table, you’ll have just enough time to pop open a bottle of wine and enjoy a few sips in front of the boob tube with your family before the oven dinger goes off. :)
It’s a great backup meal to have in the freezer when you could use a few extra moments doing something other than making dinner.
